Green Goddess Bars

Ingredients

Wet Ingredients

  • 1/2 cup sunflower seed butter I use sunbutter
  • 1/4 cup maple syrup
  • 2 tbsp coconut butter I use coconut mana

Dry Ingredients

  • 1/2 cup raw, hulled sunflower seeds
  • 1/2 cup shredded coconut unsweetened
  • 1/2 cup raw, organic raisins
  • 1/3 cup raw sesame seeds
  • 1 tbsp wheatgrass powder
  • 1 tsp spirulina powder excellent plant-based protein source

For The Glaze

  • 1 cup organic dark chocolate chips I use enjoy life dairy-free brand
  • 2 tbsp unsweetened vanilla almond milk original flavour works too

Instructions

  1. In a medium-sized pot, melt the sunflower seed butter, coconut butter, and maple syrup on low heat. Stir occasionally until completely melted. Remove from heat.

  2. While that simmers gently on a low heat, in a large bowl mix together dry ingredients. 

  3. Once the dry ingredients are mixed together, you should have a vibrant green museli-like combination. Transfer these dry ingredients into the pot and stir to combine until a dough is formed. 

  4. Line a dish with parchment paper. Use your hands to transfer the green goddess dough into the dish and lightly kneed it until approx 1/4 inch thick. 

  5. In a separate pot, add almond milk and stir on medium-high heat. Once warm, reduce heat and combine chocolate chips. Stir vigorously until you've reached a melted chocolate consistency. 

  6. Pour a thin layer of the melted chocolate on top of the green goddess mixture. 

  7. Refrigerate and let cool for 1 hour

  8. Remove from fridge and cut into bars or snacking squares. Enjoy!
