Vegan, gluten-free, naturally sweetened.

First, prepare a baking sheet lined with parchment paper. Set aside.
Add oats to a food processor and blend until it forms a meal - small chunks are ok. Add the pitted dates and blend until combined. Remove from the food processor and set aside.
Next, add the almonds and peanuts to the food processor and pulse until it forms a meal - again small chunks are ok. Add the peanut butter and pulse until well combined. Add the date and oat mixture and continue blending until it forms a dough-like mixture.
Scoop out small pieces of the dough and begin rolling into small bite-sized balls. Transfer the bites to the baking sheet lined with parchment paper and place them in the freezer for 20-30 minutes to harden.
While the bites are in the freezer, begin to melt your chocolate. You can either do this in the microwave or by using a double broiler.
Once the chocolate is completely melted and the bites have hardened, remove them from the freezer and begin to dip them in the chocolate. I recommend doing one at a time.
Transfer bites back into the freezer and allow the chocolate coating to set. Once they've completely set it's time to enjoy!
Store these in an air-tight container in the freezer for optimum freshness.
*You will likely have leftover chocolate depending on the bar size you choose to use.
**Not a fan of oats? Try substituting them for almond flour or removing them completely. But, please note that I have not tried this recipe without them so I can't promise that they will have the same consistency or flavor.
