Get ready for the best energy bars you’ve ever had, seriously. Oh, and they’re made with 100% natural ingredients making them totally healthy too – isn’t that the best? Well maybe it’s just me, but I always find it disappointing when I’m looking for a bar to have on the go, but almost every option in the store is either loaded with refined sugars or ingredients that you can’t even pronounce. So, I decided to stop settling for the “but this one has nuts, so it’s healthy…right?” option and decided to start making my own. I know it sounds impossibly overwhelming, but I promise that it’s so much easier than you think.
These green goddess bars have officially become a staple piece at my place. I find them perfect for that 3 pm sweet tooth craving (admit it, you get that too), or even as a late-night snack. The recipe initially came from my mom who introduced them to me a little while back, so I can’t exactly take credit. But I fell in love and before I knew it, I was making double batches because I couldn’t even keep them in the house! Seriously, I could have turned into a green goddess myself if that was a real thing…
The lightly glazed chocolate top, coupled with its superfood ingredients gives them an indulgent, yet healthy taste that will keep you feeling satisfied and guilt-free throughout the day.
I could go on and on about these little squares of joy, but I won’t keep you too long so that you can go and make them for yourselves and see what I’m talking about it!
Green Goddess Bars
- 1/2 cup sunflower seed butter I use sunbutter
- 1/4 cup maple syrup
- 2 tbsp coconut butter I use coconut mana
- 1/2 cup raw, hulled sunflower seeds
- 1/2 cup shredded coconut unsweetened
- 1/2 cup raw, organic raisins
- 1/3 cup raw sesame seeds
- 1 tbsp wheatgrass powder
- 1 tsp spirulina powder excellent plant-based protein source
For The Glaze
- 1 cup organic dark chocolate chips I use enjoy life dairy-free brand
- 2 tbsp unsweetened vanilla almond milk original flavour works too
In a medium-sized pot, melt the sunflower seed butter, coconut butter, and maple syrup on low heat. Stir occasionally until completely melted. Remove from heat.
While that simmers gently on a low heat, in a large bowl mix together dry ingredients.
Once the dry ingredients are mixed together, you should have a vibrant green museli-like combination. Transfer these dry ingredients into the pot and stir to combine until a dough is formed.
Line a dish with parchment paper. Use your hands to transfer the green goddess dough into the dish and lightly kneed it until approx 1/4 inch thick.
In a separate pot, add almond milk and stir on medium-high heat. Once warm, reduce heat and combine chocolate chips. Stir vigorously until you've reached a melted chocolate consistency.
Pour a thin layer of the melted chocolate on top of the green goddess mixture.
Refrigerate and let cool for 1 hour
Remove from fridge and cut into bars or snacking squares. Enjoy!
